From English Studies to Commercial Cookery
After completing six months of English language studies in Melbourne, Jinyan Chen enrolled at Clinton Institute to study Commercial Cookery. It was there that she first met Chef Mano — and it marked a turning point in both her career and her confidence as a student.

As a new international student, Jinyan often struggled with professional culinary terminology and the fast pace of classroom discussions. She usually sat in the front row so she could listen carefully and ask questions whenever she was confused.

Industry Placement at The Royce Hotel
When the Certificate III course required 200 hours of industry placement, Jinyan had no previous kitchen experience. Chef Mano personally helped her secure a placement at The Royce Hotel — one of Melbourne's respected boutique hotels.
She worked hard, and after completing her placement she was offered her first paid kitchen position. "That opportunity completely changed the direction of my career."
Encouragement When It Mattered Most
Several months later, Jinyan became discouraged and even considered leaving her job. Chef Mano patiently listened to her concerns, shared stories from his own early career, and encouraged her to persevere.
Later, when it was time for her Chef Skills Assessment, she felt extremely nervous. Chef Mano generously gave up his own personal time to help her prepare — explaining the assessment process, discussing possible questions, sharing practical strategies, and conducting mock interviews with her.
Thanks to his guidance and encouragement, Jinyan successfully passed her Chef Skills Assessment. "That experience completely changed the way I viewed challenges."
